I went and did my first keto shop on Thursday last week, and man was it expensive! Coconut oil, avocado oil, tahini, macadamia nuts, it all adds up. Thankfully, once those things are in your pantry, subsequent shops shouldn’t cost as much.
So, what have I been eating? Lots of eggs. Lots of chicken. Avocados. Bacon. But also sprouts, asparagus, broccoli, cauliflower rice. I’ve been using either coconut oil or avocado oil to cook, and lots of spices etc so I don’t get bored.
I even bought and cooked my first ever rump steak! (in that its the first one I’ve cooked myself, not my first steak ever). Think I cooked it more than I was aiming for, but only just… It was tasty either way.
Now, I was expecting keto-flu, but I was not expecting keto-insomnia! The first 3-4 days, my sleep was broken, fitful and took me forever to actually fall alseep. I’m someone who has battled insomia over the years, but haven’t had any issues since I started sleeping in my van, so this bout of it really took me by surprise.
Because of the lack of sleep, I don’t know if my fatigue was just that, or if it was actually keto-flu… Guess it doesn’t really matter, the end result if that I was tired, achy and unmotivated to do much of anything. For DAYS…
Hopefully though, the worst is behind me, as I head into week two. I’m also hoping my digestive issues (tmi but my poop hasn’t been great) will start to clear up too. I know it takes time for your gut bacteria to adjust to the new low carb/high fat way of eating, so I’m keeping my fingers crossed that things settle in the next few days.
